This special offering in the lobby features a tasting of dry-aged bistecca from Yolan — seared over Tennessee oak for a subtle infusion of smoke — paired with Aldo Clerico Barolo 2016, a wine matured in both barrique and large-format oak barrels. The pairing honors both the elemental technique of open flame and the depth of our Italian heritage — a celebration of five years, expressed through flavor.
